Up until my culinary awakening, BBQ sauce came bottled from the grocery store. But thanks to Michael Pollan I took a peak at the label of my go-to sauce and learned that the main ingredients included high fructose corn syrup and modified corn starch. Determined not to ban this staple from my kitchen, I drew inspiration from some of the “real” ingredients I loved from my fave sauces and whipped up a batch of my own.
BBQ sauce is a great recipe to make as a novice chef because the ingredient list is flexible — just open your pantry and see what you have inside — plus you can easily adjust the sweetness or spice of the sauce depending on your mood/taste preferences. I usually make a big batch because it stores well in the fridge and is great to have on hand for a last minute meal:
24 oz. bottle organic ketchup (Trader Joes)
1/4 cup brown sugar
1/4 cup apple cider vinegar
1/4 cup dijon mustard
1/4 cup worchestershire sauce
6 garlic cloves, minced
2 teaspoon hot sauce (I use Frank’s)
1 teaspoon chili powder
1 teaspoon cayenne pepper
Grab a medium size bowl and mix all the ingredients above. I like my BBQ sauce with a kick to it and a tad on the garlicky side, but you can easily start with half the amount of anything and just keep adding until you find your desired flavor combo. Also, you can use the sauce immediately but it tastes even better after a few days in the fridge. Enjoy!
