Simple Syrup

You can buy simple syrup in the store, but I suggest saving your money and making it at home. It consists of sugar and water and once made can be stored in the fridge indefinitely. Simple syrup is called for in many a cocktail, ice tea or lemonade recipes as the sugar dissolves easily, making for a smooth swallow rather than tasting crystallized chunks of sugar with each sip. You can make as little or as much as you need, just stick to a 1 to 1 ratio of sugar to water.

1 cup water
1 cup sugar

Bring water to a boil then add sugar. Stir occasionally until the sugar dissolves then take off the heat. Once cooled completely, store in the fridge. Voila, you have created simple syrup.

Optional: You can also infuse your simple syrup with flavors by adding basil, orange zest, lemon grass and more. Add the flavor enhancement with the sugar to the boiling water and once dissolved take off the heat and let stand for 30 minutes. Then strain the liquid through a wire-mesh strainer into an airtight container and store in the fridge.
