Curry powder is actually the combination of several spices, including turmeric, coriander, cumin, pepper, mustard and others depending upon the type. Given all these strong ingredients, it’s no wonder that I can feel my body temperature rising when I eat it! This recipe, however, helps soften the spice with the refreshing addition of chutney and grapes. Spooned on top of a bed of butter lettuce or into a pita, it makes for the perfect lunch.
2 cups roasted chicken, shredded
2-3 tablespoons mayo*
1 tablespoon curry powder
1 tablespoon prepared chutney**
1 tablespoon cilantro, chopped
1 cup grapes, halved
salt and pepper to taste
Shred chicken. In a separate bowl, mix mayo, curry powder and chutney. Add remaining ingredients, including chicken. Season with salt and pepper to taste.
*Look carefully at the ingredient list for mayo. Many popular brands include corn syrup, modified corn starch and other funky additives.
**You can find prepared chutney at most supermarkets. I like Trader Joe’s mango version.
