During a recent beet purchase from Star Route Farms (a booth not to be missed) at the Marin Farmer’s Market, I learned that I was making a rookie mistake when I ripped the greens from the bulbs after my transaction. I was about to throw away the bulky greens that usually just clutter my bag when Annabelle, who runs the farmer’s market and restaurant portion of Star Route Farms, stopped me and asked me why I was wasting half of my purchase. They are edible? You better believe it! When sautéed they have an earthy flavor similar to a beet — and are just as nutritious — and their texture is similar to greens such as chard or kale. The greens don’t last as long as the beets themselves, so be sure to eat them within a day or two of bringing them home from the market. This recipe makes for a quick and easy side dish or I throw the greens together with some pan-seared tofu and eat over brown rice for a light lunch.
1 bunch beet greens, leafy part removed from the stems
Splash of olive oil
3-4 garlic cloves, minced
1/2 lemon, juiced
1/4 teaspoon crushed red pepper
salt and pepper
Cut the stems into 1/2 inch pieces and coarsely chop the greens. Heat olive oil in a pan. Once heated, throw in the stems and sautee for 3-4 minutes, until tender. Then add garlic, lemon juice, crushed red pepper and the chopped greens. Cook another 1-2 minutes, until the greens have wilted. Season with salt and pepper and enjoy!
