I always thought figs were like the caviar of fruit – expensive and best paired with something luxurious like wine or delicious imported cheese. While they’re certainly enjoyable this way, fresh figs are also fabulous on something as humble as pizza! This recipe balances the mild, sweet flavor of figs with the pungent, saltiness of the prosciutto and cheese. It’s also a great use of any unripe figs that you may have accidentally purchased because you have to marinate them in balsamic vinegar first.

1 package prepared pizza dough (I used Trader Joe’s)
1.5 cups of goat cheese, crumbled
7-8 fresh figs, sliced
2 tablespoons balsamic vinegar
6 slices prosciutto
1 tablespoon olive oil
6 cups spinach
Preheat oven to 450 degrees. Roll out dough to form a circle and place on baking sheet sprinkled with either flour or cornmeal. Sprinkle goat cheese over dough. Bake for 10-15 minutes or until crust is golden brown.
In the meantime, place sliced figs in bowl and drizzle with 1 tablespoon of balsamic vinegar. Once pizza is finished, drape prosciutto slices over the dough and arrange figs slices on top. Bake for 1-2 minutes to heat through.
Mix olive oil and remaining balsamic vinegar in bowl, then add spinach. Season with salt and pepper and then pile on top of pizza. Cut and serve.
