The marriage of two of my favorite fall treats – chili and pumpkin – makes for a hearty and healthy meal. Pumpkins pack a lot of nutrients, including vitamin A and potassium, and the beans contribute low-fat protein. Top a bowl with grated cheese, a dollop of sour cream, and chopped cilantro and you’ve got lunch!
2 tablespoons olive oil
1 small onion, chopped
1 green bell pepper, chopped
2 jalapenos, finely chopped
2 cloves garlic, chopped
1 (15-ounce) can diced tomatoes
2 cups pumpkin puree
1 tablespoon chili powder
half bottle of pumpkin ale, or beer*
1 ½ teaspoon cumin
1 teaspoon salt
1/8 teaspoon cayenne pepper
1 (15-ounce) can kidney beans, drained
1 (15-ounce) can white beans, drained
Heat oil in a large dutch oven over medium heat. Add onion, bell pepper, jalapeno and garlic and cook until tender, about 5 minutes. Add tomatoes, pumpkin, 1 cup water, beer and spices. Bring to boil, then reduce to low heat and add beans. Cover and cook for 25-30 minutes and then serve hot.
*I purchased pumpkin ale from Whole Foods that is brewed locally at Buffalo Bill’s Brewery, but any decent quality beer will work as a substitute. Trust me, you’ll never make chili without beer again!

YUM! Come October and I am ready to eat everything with pumpkin it it. I love the idea of turning it into a chili, and totally agree with the necessity of beer/alcohol in chili.
