People, you’ve got to stop reading this post, head over to the Mission district in San Francisco, and eat one of the freshest, most delicious meals of your lives at Flour + Water. It’s a relatively new Italian restaurant that serves up seasonal ingredients sourced from “the unparalleled and ever abundant California artisans and growers.” Everybody who works there clearly has a passion for food. In fact, one of the servers told me that chef Thomas McNaughton planned a field trip for the staff to visit a nearby ranch where all of their pork is raised. They got to see firsthand what the pigs are fed and how they are treated. When the restaurant receives one these little piggies each week, they cover the communal table with paper and butcher up the hog right there in the middle of the restaurant! I highly doubt most waiters even know where the meat in their restaurant comes from, let alone get to see the animal’s full circle of life. It clearly shows Flour + Water’s commitment to local, sustainable food.
The menu changes daily to highlight everything and anything scrumptiously in season, but focuses heavily on wood-fired pizzas and house-made pastas. Just to get your mouths watering, here’s a quick rundown of what I ate (and by ate, I mean licked off my plate) a few weeks ago:
- Roasted delicata squash, pistachio, persimmon, fried sage and lardo* salad
- Margherita pizza (tomato, basil, fior di latte, and olive oil)
- Rosemary pappardelle with pork sausage and cippolini
- Seared pheasant breast with roasted pumpkin purre, quince, and raisin-pine-nut relish
- Persimmon rice pudding with candied pistachios
Don’t worry, I shared all of this with another person. Reluctantly.
We both agreed that the pasta took first place in taste and presentation. It looked beautiful served on a plate because there were little specks of rosemary incorporated into the actual dough. The pizza came in close second with its slightly charred edges and oh-so chewy crust.
Owner David White and David Steele managed to transform a quiet corner of the Mission into a little hot spot for eager diners. Even though I arrived at 6:30 (practically early bird hour), there was an hour and a half wait! Fortunately, Flour + Water’s extensive wine list helps make the wait less painful. I hope you enjoy it as much as I did!
*Lardo is a fancy word for cured pig fat. It has the consistency of jello and feels good in the belly!
