These warm, baked apples practically ooze holiday spirit. Serve them alongside a hearty, savory egg dish and you’ve got a complete breakfast. And since they’re so simple to prepare, you can spend your time cooking up other dishes or kicking it with the fam. Outside of the holiday season, they would make a great breakfast served up with a scoop of greek yogurt.
4 apples
1/2 cup almonds, chopped and toasted
1/4 cup raisins
2 tablespoons brown sugar
1/4 cup apple juice
Preheat the oven to 350 degrees. Using a melon baller or a paring knife, core the apples. Be careful not to pierce the bottom. In a bowl, mix almonds, raisins and sugar. Divide mixture and stuff in apples.
Place stuffed apples in a baking dish and pour in apple juice. Cover dish with foil and bake for 45 minutes to 1 hour, depending upon the size of your apples. You should cook the apples until they are easily pierced with a knife, but not so long that they begin to fall apart and loose their shape.
