There couldn’t be an easier homemade holiday gift than these nuts. They’ve become an instant staple in my holiday goodie-giving repertoire. They take less than 5 minutes of prep time and roast in about as much time as it will take you to get dressed and ready for your holiday soiree. Just throw them in a cute container – a local craft store is where I usually find and store up on a great mix of inexpensive gift-giving containers - or a clear cellophane bag. Tie a bow on them and you have yourself a great gift for your party’s host. They are also extremely easy to transport (an added bonus if you’ve ever tried carrying a tart or pudding via car or taxi) and are a universal crowd pleaser. Plus, amongst the other gut bombs and diet-wreckers that line holiday party spreads, your nuts will offer guests a healthier, filling option…leaving room for an added holiday bevvy!
1 egg white
1 teaspoon vanilla
1/4 cup sugar*
2 tablespoons cinnamon
1 teaspoons sea salt (more or less to taste)
4 cups almonds
Preheat oven to 250 degrees. In a large bowl, mix egg white, vanilla, sugar, cinnamon and salt. Add almonds and combine until fully coated. On a lightly greased cookie sheet, spread almonds evenly in a single layer. Bake for 45 minutes, tossing once or twice to ensure even roasting. Allow the nuts to cool and then store in an airtight container.
*Note: I kept the amount of sugar down because I think they still taste great without it but if you like your nuts more dessert-like try adding another 1/4 cup of sugar. If you aren’t sure if you want to add more, you can taste them just after they’ve been roasted when you pull them out of the oven, and if you want more sugar, pour your nuts back in a bowl, add the sugar, and mix while they are still warm. Add slowly and mix frequently, to ensure even coating.
