There is something utterly decadent about eating a bowl of granola with yogurt and fresh fruit in the morning. If you’ve ever ordered it from La Boulange in San Francisco or have had the pleasure of eating it from a local restaurant that makes its own version, you know what I’m talking about. But unfortunately a lot of the granola that restaurants serve, and especially the kind you find at your local supermarket, is loaded with refined sugar and processed crap. Which means your breakfast becomes more like eating a calorie-laden dessert and therefore is not up to snuff for sticking in your usual breakfast rotation.
But fear not my friends, granola doesn’t need to be a once-in-a-while, decadent meal. You can make a healthy, hearty batch at home, that is seriously simple to make. One big batch will last you a few weeks so your gourmet breakfast is ready in an instant. And an added bonus for this time of year, once you learn how to make it, is that granola can also double as a great holiday gift for friends. I often double the recipe so I have enough for me and plenty to share!
Inspired by Heidi Swanson’s recipe in Super Natural Cooking
4 cups old fashioned oats
½ cup walnuts, coarsely chopped
½ cup pecans, coarsely chopped
1 tablespoon cinnamon
1/3 cup flaxseed meal
Zest of two oranges
¼ cup coconut oil
¾ cup honey
1 ½ cups dried fruit, chopped into bite-sized chunks. (I lean towards apricots, figs and apples mostly)
Preheat oven to 300 degrees. In a large bowl combine oats, nuts, cinnamon, flaxseed, and zest. In a saucepan over medium heat, combine the coconut oil and honey then stir until mixed thoroughly. Once it’s a smooth consistency, pour over the dry ingredients and blend.
Spread your mixture on a baking sheet in a thin, even layer. If you have two baking sheets, divide the mixture and pour half on each sheet. Bake until golden brown, stirring every 10 minutes to ensure even browning. Depending on how dark and crispy you like your granola, it usually takes between 30-40 minutes. Once the mixture has browned, take out of the oven and pour it back in your large bowl then mix in the dried fruit. Let cool completely then store in an airtight container. Keeps fresh up to one month….and is great paired with fresh fruit and yogurt!
