I ate my first raw Fuyu persimmon (pictured, right) last year when one showed up unexpectedly in my CSA box. And at first, I thought it was an out of season tomato. Turns out, this golden orange fruit is delicious eaten raw like an apple, peeled and sliced into salad, or chopped up for salsa. Their sturdy flesh holds up well when sauteeing, stir-frying or broiling as well. The other popular type of persimmon is Hachiya (pictured, left), which is larger and more pointed than a Fuyu – sort of like an acorn. While Fuyus are best for savory applications, Hachiyas shine in sweet dishes because their flesh has clove, cinnamon and nutmeg undertones. But beware, Hachiyas are extremely astringent and tannic when they aren’t fully ripe – a lesson I learned the hard way when I had to spit out a mouth full!
- How to pick: Fuyus are tastiest when they’re firm, but yield slightly to pressure. Contrarily, Hachiyas should be very soft and so ripe that they look like they’re going to burst with juice. Both types bruise easily, so be careful when handling.
- How to store: Store them at room temperature. If you want to speed up the ripening process for Hachiyas, freeze them overnight or store them in a brown bag for 2-3 days.
- How to prepare: Bite into Fuyus whole, or, if you don’t like the skin, simply core, peel and slice them. They also work well chopped and made into chutneys or salsas (fiesta time in Fall!). When Hachiyas are ripe, simply cut them in half and scoop out the flesh. For best results, chop the flesh in a food processor for 1-2 minutes.
