Nothing’s better than cozying up in front of the fire with a warm mug of hot chocolate – except if said mug is topped with fluffy marshmallows. In my quest to avoid processed ingredients like corn syrup, modified corn starch and hydrogenated vegetable oils, I knew I wouldn’t find anything wholesome at the super market. Instead, I searched high and low for a recipe with more natural ingredients and liked Tyler Florence’s version best. Surprisingly, marshmallows are pretty simple to whip up and they taste so much better than the dry, brittle and chemical-filled fluff you find elsewhere. Plus, they make great gifts if packaged in a cellophane bag or in a box lined with wax paper.
3 tablespoons powdered gelatin
2 cups cold water
2 cups sugar
2 egg whites
2 cups confectioner’s sugar, plus some for dusting
1/2 teaspoon vanilla
Vegetable oil
Pour the gelatin and water into a medium sauce pan and allow gelatin to soften for about 10 minutes. Then add the regular sugar, turn on heat to low and dissolve sugar for about 8-9 minutes. Remove from heat and cool.
In a large bowl or mixer, beat egg whites until they form stiff peaks. Gently fold in the confectioner’s sugar and vanilla. Turn the mixer on low and slowly add the gelatin mixture. (It’s really important that the mixture is cool, otherwise it will overcook the eggs and/or make it difficult get everything fluffy). Beat mixture on high until stiff peaks form, about 10-13 minutes. This is kind of the fun part because the mixture will double in size!
Line an 8×8 inch baking dish with foil, grease the foil with vegetable oil and then coat with confectioner’s sugar. Pour the marshmallow mixture (which should now look very fluffy and be very sticky) into the dish. Allow the mixture to dry out overnight. In the morning, invert the marshmallow block onto a cutting board and cut into 2 inch cubes. Gently coat each edge with more confectioner’s sugar.
At this point, your marshmallows are ready for the eating. Since I wanted to give mine as gifts, I tried sprucing them up further with some chocolate. Using a double boiler, I melted half a bag of semi-sweet chocolate chips with a tablespoon of milk. Once the chocolate melted, I dipped each marshmallow into the mixture and then let them dry on a piece of wax paper. So cute and so yummy!
