Recently I went skiing in Tahoe with a group of girls who taught me all about the glories of “après-ski” (a.k.a. hitting up the mountain bar for a stiff, post-ski drink!). I made the rookie mistake of opting for a bloody Mary, while most of the other ladies cupped their hands around steaming, chocolatey, creamy, boozy concoctions. Not only have I learned my lesson about what to order après-ski, but I came up with a mixture of my own. It’s white hot chocolate meets white Russian…and it’s perfect for unwinding after a long day of skiing.
5 cups low-fat milk
1 cup white chocolate chips
Kaluha or coffee-flavored liquor
Bitter-sweet chocolate or homemade marshallows, for topping
Serves 4- 6
Heat milk in a saucepan over medium-high heat until hot. Be careful not to scorch the milk or it will taste bitter. Add chocolate chips and whisk until melted through and frothy, about 2 minutes. Ladle about 1/2 cup of mixture into a mug and mix in 1/2 of a shot glass of Kaluha. Feel free to add more booze to your liking!
Grate chocolate on top and/or add marshmallows. Serve immediately!
