By now, I’m sure you’ve heard the phrase “breakfast is the most important meal of the day” countless times. Everywhere we turn, media is telling us to chow down within an hour of waking up to help manage weight (eating breakfast helps us eat less throughout the rest of the day) and jump start our metabolisms. But the reality is, sometimes squeezing in a few extra minutes of sleep and the stress of our busy lives gets in the way of smart choices.
I love breakfast – mostly because I love any chance to put something delicious in my mouth – and therefore am an adamant early morning eater. Up until recently, I committed to a wholesome breakfast, making Six Minute Eggs or noshing on Homemade Granola with low-fat yogurt and fruit. But a recent bathroom remodel threw all reason out the window. I ended up falling into the trap of grabbing whatever food I could find and not glancing at labels before throwing breakfast foods in my grocery cart, rather than stopping to ask myself what the RIGHT thing to be putting in my body should be.
So, to kick off this New Year, I’m hitting the reset button on breakfast. What this means, is eating “mindfully” when I wake up. I don’t necessarily mean eating a healthier version of the breakfast you are eating now (as I’m sure most of you have that part down pat, right?) – although if you need some healthy inspiration our friends at fit·n·pretty have some great breakfast suggestions. I mean looking at the label on your box of cereal, the creamer you are about to pour in your coffee, or the bread you buy for toast to find out if they include any ingredients you can’t pronounce; buying farm fresh eggs from the farmer’s market rather than the conventional version; only using in-season veggies rather than out-of-season asparagus in your veggie scramble; and looking into buying organic dairy.

One of my absolute favorite breakfast includes eggs and toast! But…eating two eggs everyday isn’t so great for your cholestoral, so what I try to do is saute up some veggies (I like onions, mushrooms, and spinach) and then scrambling it with two or three egg whites. Pair it with a piece of wheat toast for a satisfying and healthy breakfast. You can get a whole serving of veggies before lunch! If you’re looking for calcium too, then sprinkle some grated cheese on top.
