When I tell people that steel-cut oatmeal is my preferred morning meal, I often hear back, “but it takes FOREVER to make!” Oh no my friends, you’ve been fooled. While the directions on the box say that it takes about 45 minutes to make up a batch – far longer than any of us are willing to commit to making food in the wee hours of morning when every second counts – there is a much simpler method that makes whipping up steel-cut oatmeal a walk in the park. It practically makes itself while you sleep! And once you taste the flavor and texture that the steel-cut version offers, I promise you you’ll never go back to your wimpy rolled-oats.  Plus, the batch can be put in the fridge so you have instant breakfast all week long!

Six cups water
1 ½ cups steel-cut oats
¼ cup flaxseed meal (if desired)
Pinch of salt
Toppings (mine include fresh fruit, chopped almonds, cinnamon and a drizzle of honey)

  1. Bring six cups water to a boil. Add your pinch of salt, then stir in 1 ½ cups steal-cut oats.
  2. Let boil for one minute, then turn off the heat and cover. Let stand overnight.
  3. The next morning, turn the heat back on and let boil another 8-10 minutes. Mix in flaxseed meal, then scoop yourself a big bowl, add toppings and enjoy.
  4. Store the rest in the fridge – up to a week.

Really, it’s that simple.

what a great idea. no more waiting in the morning for our cereal to cook…. keep these good ideas coming…

I tried this recipe and it is absolutely delicious! I used the flaxseed meal and topped it with real maple syrup, cinnamon, and sliced almonds. Next time I’ll try it with raisins. Thanks so much for this recipe!
