Oatmeal Date Cookies

I love a cookie. I rarely meet a cookie I don’t like. So in my quest to eat cookies that have some nutritional value, I decided to swap out chocolate chips for dates in these oatmeal cookies.

1/2 cup soft butter
1/3 cup sugar
1/2 cup brown sugar
1 large egg
2 tablespoons vanilla
3/4 cup flour
1/4 cup wheat germ
1/2 teaspoon baking soda
1/4 teaspoon salt
1  1/2 cup oats
8 dates, pitted and chopped into chunks

Makes about 18 cookies

Preheat oven to 350 degrees.

Drop your chopped dates into some flour to make them less sticky and easier to work with. I keep a little bowl of flour ready as I chop my dates, drop them in the flour and coat them.

Beat the butter and sugars until soft.

Add the egg and vanilla and beat until combined.

Combine the flour, wheat germ, baking soda and salt in a separate bowl and then add to the sugar and butter mixture. Mix on low speed until combined.

Gently stir in the oats and dates.

Drop cookie dough onto ungreased cookie sheets. Bake for 12 minutes or until golden brown.

Did you really mean 2 tablespoons of vanilla? I’m trying the recipe out right now. Think I’ll try teaspoons. Thanks for the idea!
