I was over at Tony’s Market the other day (a local favorite of mine) and tasted an interesting mix of Cantaloupe Chicken Salad and thought to myself, well hmm…that’s a little odd but why not! So, I decided to make my own version with an added zing to the mix: Curry! Personally, I don’t like to be shy with the curry so depending on your taste buds feel free to increase/decrease the amount you use in your own version. After it’s all mixed up throw it in a pita, on some wheat bread or sample with some crackers!
- 2 cups cubed cantaloupe (about 1/2 of a small one)
- 1/2 cup chopped celery
- 2 generous cups shredded or cubed chicken, cooked
- 1/4 cup sliced almonds
- 1/4 cup raisins
- 1/2 cup greek yogurt
- 1/4 cup light mayonnaise
- 1 1/2 teaspoons curry
- dash of salt
In a large bowl, mix together chicken, almonds, raisins, yogurt, mayo, curry and salt. Once mixed, gently stir in cantaloupe and enjoy!
