I have been known to have a couple in the fridge ready to go during the busy holiday season. Add it to a sweet themed Charcuterie board with fresh fruits and cookies. A prefect sweet option for a cocktail party.

:

  • 200gr- 2 Cup (granted ) Dark Chocolate

  • 180gr. - 1 1/2 Cup (Crushed) Vegan Biscuits

  • 60 ml- 1/4 Cup- 2 fl. Oz -Soy milk

  • 40 ml- 1.35 fl oz - Vegetable oil

  • 1 Teaspoon Coffee Powder

  • Pinch of Salt (optional )

INSTRUCTION :

Start with 220 grams of your favorite cookies (you can use any type of biscuits you like )

You can easily break the biscuits with your hand into a bowl or pour them on a dry cloth, close them on all sides and crush them by applying pressure with your hands, Once they are well chopped, keep them aside. ( if you like to crush them into a blender or food processor be careful to don't over crush them or you will have a powder).

Melt 160gr. of dark chocolate over low heat using a double boiler without burning the bottom.

Once all the chocolate has melted, remove it from the heat and add 60 ml of soy milk ( or any vegetable milk you like), and 40 ml of vegetable oil, coffee powder, and a pinch of salt ( optional). Mix well both to make the mixture fluid.

Mix quickly, pour everything on a sheet of baking paper, and roll it up well trying to give it the typical shape. Roll it up and close the ends like candy, and let it rest in the freezer for at least 3 hours.

Once it has hardened, take it out of the freezer, remove the baking paper ( roll it in icing sugar if you like ). Serve the chocolate salami in slices, just like a real salami.

NOTES:

If you want to make your dessert even richer and tastier, you can add chopped hazelnuts and candied fruit, by taking out 60 gr of biscuits and replace it with the nuts you like or candied fruit.
