This coleslaw is a bit unusual from what we are used to in America but is great for
switching things up and serving something unique with a nod to something familiar.
This recipe is an instant reminder of my childhood. A family slaw recipe that I grew up eating, be it at our house or dinner at one of my many aunts and uncle houses and it's how I first learnt to make coleslaw from scratch. It features an unique and easy dressing recipe. The cabbage retains a wonderful freshness and texture. This coleslaw has a faint sweetness which is perfect along side so many dishes but I especially love it with pulled pork.
Great to serve it during the summer and fall because it adds a pleasing splash of color to any plate. The best of part of course is that you can make it ahead of time and because it's made with cabbage it's inexpensive and produces a substantial serving. Cabbage as we know is rich in vitamin B6 and folate, both of which are essential for many important processes in the body, including energy metabolism and the normal functioning of the nervous system. Go on switch up your coleslaw game with this slaw recipe!
Note: You can make this a little spicier by adding a sliced Jalapeno along side the bell pepper.
